Garlic and Herb Oven Roasted Chicken

Chicken always seems to be a staple source of protein for meals on a weekly basis; but let’s be honest too, it can get kind of boring, right? Well it’s not boring any more! We decided to make some garlic and herb oven roasted chicken, and it turned out amazing! Plus it’s insanely easy to make. 

Garlic and Herb Oven Roasted Chicken

One of the best ways to add flavor to your bird is to make an herb rub and rub it down and let it sit. If you have time do it a day ahead of time. It adds so much more flavor and moisture to the meat.

We used: 

Portuguese Chicken Seasoning from Try the World (but you can use any herb chicken spice mix)
2 Tbs of chopped garlic 
1 Tbs of pepper 
2 Tsp of salt 
1 Whole Chicken
3 Tbs of olive oil 

Garlic and Herb Oven Roasted Chicken

Mix all of the ingredients in a bowl then rub it all over the chicken. Get it in between the skin and breast to give it more flavor too! 

If you have time, put the chicken back in the refrigerator to let it soak in all of the flavor, or heat the oven to 500 and put it in the oven for 15 minutes to get it all browned up. Then tent the chicken with foil to keep it form burning, and turn down the heat to 350 and finish roasting for 2 hours. Remember to check the internal temperature to make sure it’s fully cooked when the time is up.

  Once you take it out of the oven let it cool for at least 20-30 minutes to let the juices settle and so you don’t burn your hands when you cut into that bird!

Ingredients

  1. If you have time, its a great idea to let your chicken marinate overnight
